Blend strawberries and peeled lemons until smooth.
Strain through a fine mesh strainer into a medium saucepan. Discard solids.
Add honey and gelatin powder to the strained juice. Stir to combine.
Warm over low heat for about 2 minutes, stirring, until gelatin fully dissolves. Do NOT boil!
Remove from heat and stir in sea salt or electrolyte packet.
Pour into gummy molds and refrigerate for 30 minutes or until set.
Pop out of molds and enjoy! Store in an airtight container in the fridge for up to 1 week.
- Do NOT bring the gelatin mixture to a simmer or boil, this will prevent the gummies from setting.
- A squeeze bottle makes filling the molds much easier and less messy.
- Use a grass-fed gelatin powder for the most collagen and nutritional benefit.
- Taste the mixture before pouring into molds and adjust honey to your preferred sweetness level.
- Store in an airtight container in the fridge for up to 1 week.
